Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the ground beef, breadcrumbs, finely diced onion, minced garlic, Worcestershire sauce, Dijon mustard, egg, milk, salt, black pepper, smoked paprika, and dried thyme.
  • Using your hands, mix gently until just combined; take care not to overmix.
  • Shape the mixture into a loaf and place it in a greased baking dish.

Baking

  • Place the prepared meatloaf in the preheated oven and bake uncovered for about 45 minutes.

Mushroom Topping

  • While the meatloaf bakes, heat 2 tablespoons of butter in a skillet over medium heat.
  • Add the sliced cremini mushrooms and sauté until golden brown.
  • Stir in the minced garlic, beef broth, and Worcestershire sauce, then let it simmer until the mixture slightly thickens.

Cheese and Final Bake

  • After 45 minutes, carefully remove the meatloaf from the oven.
  • Lay the slices of Swiss cheese on top and spoon the mushroom mixture over the cheese.
  • Return the meatloaf to the oven for another 10 minutes.

Serving

  • Take the meatloaf out, drizzle it with fresh parsley, and slice into thick portions.
