Ingredients

Instructions

Preparation

  • Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  • For the crust: Combine the graham cracker crumbs and melted butter, then press into the bottom of the prepared pan. Bake for 10 minutes and let cool.

Fudge Layer

  • Melt white chocolate chips and sweetened condensed milk in a microwave-safe bowl in 30-second intervals until smooth.
  • Divide the mixture into two bowls, adding pink food coloring to one and blue to the other. Pour the pink fudge over the crust and chill for 30 minutes, then repeat with the blue fudge layer.

Cheesecake Layer

  • Beat the cream cheese until smooth, then mix in granulated sugar, sour cream, and vanilla extract.
  • Add eggs one at a time, mixing well after each addition. Pour the cheesecake batter over the fudge layers.

Baking

  • Bake for 60 to 70 minutes, until the center is set. Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour.

Chilling and Serving

  • Transfer to the refrigerator and chill for at least 4 hours or overnight.
