Instructions

Preparation

  • Preheat your oven to 325°F (163°C) and lightly grease a 9-inch springform pan.
  • In a mixing bowl, combine Oreo crumbs with melted butter until it reaches a sandy consistency. Press firmly into the bottom of the prepared pan. Bake for 10 minutes and allow to cool completely.

Cheesecake filling

  • In a large bowl, beat softened cream cheese with an electric mixer until smooth.
  • Gradually add in granulated sugar, mixing well until combined.
  • Incorporate sour cream and vanilla extract, beating again until smooth.
  • Add eggs one by one, beating well after each addition.
  • Sift in cocoa powder and drizzle in red food coloring, mixing until the color is vivid and uniform.
  • Gently fold in crushed Oreos and diced strawberries until evenly distributed throughout the batter.

Baking

  • Pour cheesecake batter into the cooled Oreo crust, spreading it evenly.
  • Bake for 60-70 minutes, until the center is set but slightly wobbly. Turn off the oven and let cheesecake cool inside with the door slightly ajar for about 1 hour.
  • Cover loosely and transfer to the refrigerator, allowing it to chill for at least 4 hours or preferably overnight.

Ganache preparation and decoration

  • In a microwave-safe bowl, combine white chocolate chips and heavy cream. Heat in intervals of 30 seconds, stirring thoroughly until smooth. Mix in pink food coloring.
  • Drizzle the pink chocolate ganache over the edges of the chilled cheesecake, allowing it to drip down the sides.
  • Top with whipped cream, fresh strawberries, edible glitter, and unicorn horn and ears decorations.

Notes

For an even richer flavor, consider using high-quality cream cheese. Greek yogurt can be used instead of sour cream. Do not skip the chilling time for a perfect cheesecake consistency.
