Ingredients

For the filling

  • 2–3 pieces shallots, thinly sliced Sweet and aromatic, refined alternative to onions.

  • 1/2 tsp balsamic vinegar Elevates sweetness and brightness of shallots.
  • 2 tbsp crumbled feta cheese Creamy and tangy for a Mediterranean flair.
  • 1 sheet puff pastry, thawed and cut into 4 squares Buttery and flaky base.
  • 1 piece egg (for egg wash) Ensures a golden crust.

For finishing

Instructions

Preparation

  • In a skillet, melt the butter over medium heat.
  • Once melted, add the shallots, followed by brown sugar, balsamic vinegar, salt, and pepper. Stir gently to coat the shallots.
  • Cook for about 10 minutes, stirring occasionally, until they are golden brown and soft.

Baking

  • Preheat your oven to 200°C (390°F) and line a baking tray with parchment paper.
  • Spoon a small pile of the caramelized shallots onto the tray for each tart, and top with crumbled feta cheese.
  • Place a square of puff pastry over each pile, gently tucking the edges around the shallots and feta.
  • Brush the tops with the egg wash.
  • Bake for 18–22 minutes, until the pastry is puffed and deep golden brown.
  • Once baked, use a spatula to carefully flip each tart over onto a plate.
  • Garnish with fresh thyme or a drizzle of olive oil if desired.

Notes

For a healthier alternative, consider using whole wheat puff pastry. These tarts can also be made ahead of time and frozen before baking.
