Ingredients

For the Coconut Lime Dip

  • 1 tbsp lime zest
  • 2 tbsp granulated sugar
  • 1/4 tsp chili-lime seasoning or Tajín (optional) For a spicy kick.
  • 1/2 cup coconut yogurt (or plain Greek yogurt with coconut extract) Can substitute with Greek yogurt.
  • 1 tbsp honey or maple syrup Maple syrup for vegan option.
  • 1 tbsp fresh lime juice
  • 1 tsp lime zest (for extra zing)
  • 1 pinch salt

Instructions

Preparation

  • Cut the watermelon into thin, fry-like sticks that are about 1/2 inch thick. Chill the watermelon sticks in the fridge for extra crispness while you prepare the dip.
  • In a small mixing bowl, combine the lime zest and granulated sugar until fragrant. Sprinkle this mixture generously over the chilled watermelon sticks. Optionally, add a sprinkle of Tajín for a spicy twist.

Coconut Lime Dip

  • In another bowl, whisk together the coconut yogurt, honey (or maple syrup), fresh lime juice, additional lime zest, and a pinch of salt until smooth and creamy. Chill dip in the fridge for about 10 minutes to let flavors meld.

Serving

  • Arrange the watermelon fries on a platter and place the bowl of coconut lime dip in the center. Garnish with more lime zest and serve immediately.

Notes

For best experience, choose a ripe watermelon and try adding fresh mint or strawberries for a varied platter. Adjust the sweetness of the dip by varying the honey or using a plant-based sweetener.
