Pastry and Filling

  • 2 sheets puff pastry (thawed if frozen) Light and flaky, providing a buttery shell.
  • 150 g feta cheese Creamy and tangy, offers a subtly salty kick.
  • 2 tbsp cream cheese or Greek yogurt Adds a luscious creaminess.
  • 1 tbsp olive oil Enhances flavor and moisture.
  • 50 g sun-dried tomatoes, finely chopped (oil-packed, drained) Adds vibrant color and rich essence.
  • 1 tsp dried oregano or thyme Fragrant herbs that add aroma.
  • 1 egg (for egg wash) Creates a glossy finish.
  • 4 tbsp honey Forms the delightful hot honey center.
  • 1/2 tsp chili flakes or hot sauce Adds a hint of spice.
  • Sesame or nigella seeds for topping Adds crunchy texture.
  • Fresh thyme leaves For garnishing.
  • Flaky sea salt Enhances flavors.

Instructions

Preparation

  • Preheat your oven to 200°C (400°F) and line a large baking tray with parchment paper.
  • In a mixing bowl or food processor, blend the feta cheese, cream cheese (or Greek yogurt), and olive oil until smooth and creamy.
  • Stir in sun-dried tomatoes and oregano or thyme.
  • Roll out both sheets of puff pastry into equal circles. Place one circle on the baking tray and spread the creamy feta mixture evenly across, leaving a 1.5 cm border.
  • Lay the second circle of pastry on top and cut 16 equal strips from the center out towards the edges, then twist each strip gently to form petals.

Baking

  • Brush the pastry with the egg wash and sprinkle sesame or nigella seeds on top.
  • Bake for 20–25 minutes, or until golden brown.
  • While cooling, warm the honey with chili flakes or hot sauce.

Serving

  • Once cooled, pour the hot honey into a bowl and place it in the center of the pastry, garnished with fresh thyme leaves.

Notes

Thaw puff pastry completely. Use a food processor for a creamy consistency. For an extra crunch, roast sesame or nigella seeds before applying them.
