Ingredients

For the Pastry

For the Mousse

  • 1 tbsp powdered sugar Sweetens the mousse.

For Assembly and Garnish

Instructions

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Cut each pastry sheet into three equal rectangles and prick each rectangle with a fork.
  • Brush them with the egg wash and bake for about 12-15 minutes until golden brown.
  • Let the baked pastries cool and dust them with powdered sugar.

Mousse Preparation

  • Melt the white chocolate in a heatproof bowl over simmering water or in the microwave until smooth.
  • In a separate bowl, whip the heavy cream with vanilla extract and powdered sugar until soft peaks form.
  • Gradually fold in the cooled white chocolate into the whipped cream, being careful not to deflate the mixture.
  • Refrigerate the mousse for at least 20 minutes to set.

Assembly

  • Start with a layer of puff pastry, followed by white chocolate mousse and a layer of sliced strawberries.
  • Repeat process two more times, finishing off with a layer of mousse.
  • Sprinkle with white chocolate shavings and garnish with fresh mint leaves.

Notes

For best results, ensure puff pastry is properly thawed. You can use store-bought white chocolate mousse for convenience.
