Ingredients

For the crust

  • 200 g digestive biscuits (or graham crackers), crushed into fine crumbs Use digestive biscuits for a classic flavor.
  • 100 g unsalted butter, melted and golden Ensure the butter is not too hot before mixing.

For the filling

  • 300 g full-fat cream cheese, rich and creamy Bring to room temperature for easier mixing.
  • 300 ml double cream (heavy cream), luscious and thick
  • 100 g powdered sugar, sweet and light Sifted for better incorporation.
  • 1 medium juice of a lemon, freshly squeezed Adds zesty brightness.
  • 2 medium juice and zest of 2 limes Use freshly squeezed juice for best flavor.
  • 1 tsp vanilla extract For a subtle warmth.

For decoration

  • as needed extra lime slices for decoration For a fancy touch.
  • as needed whipped cream for decoration Light and fluffy.
  • as needed crushed biscuits for decoration For a crunchy contrast.
  • as needed lime zest for decoration Vibrant and colorful.

Instructions

Preparation

  • Mix the melted butter with the finely crushed digestive biscuits until all crumbs are well coated. Press firmly into the bottom of a springform tin and chill in the refrigerator for 30 minutes to set.

Filling

  • In a mixing bowl, combine the full-fat cream cheese with the powdered sugar, lemon juice, lime juice, zest, and vanilla extract. Whisk until smooth and creamy.
  • Whip the double cream in a separate bowl until it reaches soft peaks. Gently fold the whipped cream into the citrus cream cheese mixture.

Assembly

  • Pour the creamy filling over the chilled biscuit base. Smooth out the top of the cheesecake and chill in the fridge for at least four hours, but overnight is recommended for best results.
  • Once set, pipe whipped cream around the edges, and sprinkle with crushed biscuits, lime zest, and decorative lime slices.

Notes

Use fresh citrus juice and zest for vibrant flavors. If preferred, substitute limes with oranges or grapefruits. Store in an airtight container in the refrigerator for 3-4 days or freeze for up to three months.
