Instructions

Preparation

  • Preheat your oven to 425°F (218°C).
  • Line a baking sheet with parchment paper.
  • Cut the zucchinis into 3-inch long and 1/2-inch thick strips.
  • In a bowl, beat the eggs with a pinch of salt and black pepper.
  • In a separate plate, mix the panko bread crumbs and grated Parmesan cheese.

Coating and Baking

  • Dip each zucchini strip into the egg mixture, then press it into the panko-Parmesan mixture.
  • Arrange the coated zucchini strips on the prepared baking sheet in a single layer.
  • Bake for about 20–25 minutes, or until golden and crispy.

Serving
