Ingredients

For the Zucchini Rounds

  • 2 medium zucchinis Sliced into 1/4-inch rounds
  • 6 ounces soft, spreadable goat cheese Creamy and tangy
  • 2 tablespoons olive oil For brushing the zucchini
  • 1/4 teaspoon sea salt Enhances natural flavors

For the Honey Drizzle

  • 1/4 cup honey The star of the dish
  • 2 tablespoons sliced almonds Toasted for crunch

Instructions

Preheat the Grill

  • Preheat a grill pan or skillet over medium heat. Brush both sides of the zucchini slices with olive oil, season with salt and black pepper. Grill for about 2 minutes per side until tender and marked.

Prepare the Honey Drizzle

  • In a small saucepan, warm the honey over low heat. Stir in toasted almonds and fresh thyme leaves, add red pepper flakes if using, simmer for 1 minute and set aside.

Assemble the Rounds

  • Spread goat cheese on half of the grilled zucchini slices, stack with another slice to create layers, then drizzle with almond thyme honey.

Garnish and Serve

  • Garnish with extra thyme leaves and toasted almonds. Serve warm or at room temperature.

Notes

For extra flavor, add a sprinkle of lemon zest to goat cheese. You can also serve alongside a simple salad or on a charcuterie board.
